- ½ teaspoon vanilla extract
- 2 very ripe bananas (mashed (about 1 cup))
- ½ cup mini chocolate chips

- Preheat Griddle:
- If using an electric griddle, preheat to 350°F (175°C). For a stovetop pan, preheat over medium heat.
- Mix Dry Ingredients:
- In a large bowl, whisk together the flour, brown sugar, baking powder, salt, and cinnamon.
- Combine Wet Ingredients:
- In a separate bowl, whisk the milk, egg, oil, and vanilla extract until well combined.
- Combine Mixtures:
- Pour the wet ingredients into the dry ingredients.
- Add the mashed bananas.
- Stir gently until just combined; it’s okay if the batter is slightly lumpy.
- Add Chocolate Chips:
- Fold in the mini chocolate chips.
- Cook Pancakes:
- Lightly grease the preheated griddle or pan with cooking spray or a small amount of butter.
- Pour about ¼ cup of batter onto the griddle for each pancake.
- Cook until bubbles form on the surface and the edges look set, then flip and cook until golden brown on the other side.
- Serve:
- Serve warm with maple syrup, additional banana slices, or whipped cream as desired.
