What you’ll need:
- 125 g unsalted butter (softened)
- 100 g granulated sugar
- 100 g light brown sugar
- 1 medium egg
- 1 tsp vanilla extract (optional)
- Zest of 1 large orange (or 1 tsp orange extract)
- 25 g cocoa powder
- 225 g plain flour
- ½ tsp bicarbonate of soda
- ½ tsp baking powder
- ½ tsp salt
- 250 g Terry’s Chocolate Orange (chopped)
Instructions
Preheat the oven:
- Set your oven to 190°C (170°C fan) and line 2-3 large baking trays with parchment paper.
Cream the butter and sugars:
- In a mixing bowl, beat the softened butter, granulated sugar, and light brown sugar together until creamy and smooth.
Add wet ingredients:
- Mix in the egg, vanilla extract (if using), and orange zest or extract until everything is combined.
Incorporate dry ingredients:
- Sift in the cocoa powder, plain flour, bicarbonate of soda, baking powder, and salt. Mix until a dough forms.
Fold in the chocolate:
- Stir in the chopped Terry’s Chocolate Orange pieces, making sure they are evenly distributed throughout the dough.
Portion the dough:
- Scoop the dough into balls (around 5cm in size) and place them on the prepared trays, leaving space between each for spreading.
Bake the cookies:
- Bake the trays of cookies in the oven for 10-12 minutes until the edges are set but the centers are soft.
Add extra chocolate (optional):
- Immediately after removing from the oven, press a segment of Terry’s Chocolate Orange onto each cookie for extra indulgence.
Cool the cookies:
- Allow the cookies to cool on the trays for about 10 minutes before transferring them to a wire rack to cool completely.
