- 4 large egg yolks
- 1/2 cup granulated sugar (divided)
- 1 1/2 cups whole milk
- 1 1/2 cups heavy cream
- 1 teaspoon vanilla bean paste or vanilla extract
- Up to 16 ounces of your favorite mix-ins (chocolate chips, fruit, etc.)
Instructions
- Chill the Attachment: Place your KitchenAid Ice Cream Churner attachment in the freezer for 14-16 hours before starting.
- Prepare the Custard Base: In a bowl, whisk together egg yolks and 1/4 cup of sugar until light and fluffy. In a saucepan, combine milk, heavy cream, the remaining sugar, and vanilla over medium heat until foamy (about 165°F).
- Temper the Egg Yolks: Gradually add a spoonful of the hot milk mixture to the egg yolks while whisking continuously. Repeat this process to prevent curdling. Pour the tempered yolk mixture back into the saucepan.
- Cook the Custard: Stir constantly over medium-low heat until it coats the back of a spoon and reaches 170°F. Strain through a mesh sieve into a bowl to remove any lumps. Cover with plastic wrap directly on the surface and chill in the fridge for 12-16 hours.
- Churn the Ice Cream: Once chilled, pour the custard into your frozen attachment and churn for 20-30 minutes until thickened to a soft-serve consistency.
- Add Mix-ins: Gently fold in your desired mix-ins before transferring the ice cream to a loaf pan.
- Freeze and Serve: Cover and freeze for an additional 2-3 hours for a firmer scoop!
